Abstract
Individual response to diet is modulated, in each individual, by the continuous interaction between the internal and external environment. Hence the need for precise investigations to refine the classification of phenotypes, which form the fundamental pillar to understanding the inter-individual variability observed in certain diseases and their evolution. Precision nutrition requires an in-depth study of the factors that determine individual responses to dietary treatments. Metabolomics is able to provide answers in a very short time, its use is not limited to scientific research but is also of great application in clinical practice. Thanks to its methodology, we are able to ‘read’ metabolic processes and any dysregulation of them will also require nutritional intervention. In this didactic course we will evaluate various aspects, such as nutritional deficiencies, bioavailability of macro- and micronutrients, the functioning of energy production processes, enzymatic processes, the intestinal microbiota and detox systems, highlighting the fundamental steps of biochemical reactions and their functioning. Consequently, we will apply precision nutrition in various disease states confirmed or revealed by the functional reading of the metabolomic profile.
